1 cup of Frozen Peas
2 tablespoons of Lemon Juice
2 tablespoon of Extra Virgin Olive Oil
1/2 teaspoon of Chilli Flakes
Season to taste with salt and pepper
- Leave peas to thaw for an hour or microwave for 20 seconds. Both work equally well.
- Drain any water residue from the defrosted peas.
- Mash peas with fork and add in other ingredients. Mix together.
- Use as a topping on toast or in a big salad bowl.
